Description: Late Nights is the sixth release of our Barrel-Aged Stout program and this year we've taken inspiration from late night diner treats. Late Nights 3 is a rich and decadent Imperial Pastry Stout, aged in Buffalo Trace, Heaven Hill and Cape Byron Distilling whisky barrels, conditioned on layers of salted caramel and pretzels. This pastry monster pours a rich dark colour, coating the glass, with a treacle toffee coloured spongey head. Huge notes of salted caramel burst through on the nose, followed by rich whisky notes from the barrels, backed up with classic barrel raisin, oak vanilla notes. Those flavours follow through as promised on the palate with immediate hits of rich chocolate, sweet salted caramel, choc chip cookies with a pinch of salt on top and a nice slightly roasted back end. The finish is slick and oily in the best way, enhanced by a super soft carbonation to really sip on. The sweetness is ever so balanced by those roasty notes from the barrel and just a slight hit of salt from the sea salt addition to balance this one out perfectly.
