This wine opens with citrus blossom, green apple, and a fine thread of stone fruit, all wrapped around a distinct mineral backbone that recalls a young, razor-sharp Chablis. The palate is taut and lean, with a bright acidity that sharpens its natural purity and elegance. Spontaneously fermented and left unmanipulated, it’s a vegan, low-intervention wine that captures the tension and energy of its terroir.
