Blanc de Blancs 2022 is een zeer precieze, terroirgedreven mousserende wijn die spanning en elegantie perfect combineert. In de neus frisse limoen en groene appel, aangevuld met witte bloesem, mediterrane kruiden en een subtiele noot van hazelnoot en patisserie. In de mond is de wijn droog en helder, met fijne, levendige bubbels, een strakke citrus en een duidelijk kalkachtig-zilt accent dat voor lengte zorgt. De afdronk is lang, krijtachtig en puur, met een frisse, gastronomische precisie.

Vinificatie.
De druiven worden per variëteit afzonderlijk gevinifieerd in roestvrij staal. De tweede gisting gebeurt op fles volgens de traditionele methode. De wijn rijpt minimaal 18 maanden sur lie (in de praktijk rond twee jaar), wat extra textuur en complexiteit geeft. De stijl is Extra Brut met een zeer lage dosage, zodat de mineraliteit en spanning volledig centraal blijven.

Het domein.
Raventós i Blanc is een historisch domein met wortels die teruggaan tot de 15e eeuw en geldt als een referentie voor kwaliteitsbubbels uit Catalonië. Het huis verliet de Cava-DO om de focus volledig op herkomst en strengere kwaliteitsprincipes te leggen via Conca del Riu Anoia. In de wijngaarden wordt milieubewust en biodynamisch gewerkt, met veel aandacht voor bodemgezondheid, biodiversiteit en lage opbrengsten. In de kelder is de aanpak precies en minimalistisch, met lange rijping op de lies om finesse en diepte op te bouwen zonder het terroir te maskeren.
