De wijn : een zuurzoete wijn van bevroren druiven die 's ochtends vroeg wordt geoogst als de druiven op -8 graden ingevroren zijn.

Tegen het einde van de 18e eeuw ontdekten Duitse en Oostenrijkse wijnboeren, verrast door vroege vorst, bij toeval dat het mogelijk was ijswijn te produceren. Omdat op een nacht de druiven waren bevroren, moesten  ze de bevroren druiven persen , maar het resultaat was ... verrassend zeer succesvol!

Deze zeer geweldig zoete wijn wordt in kleine hoeveelheden geproduceerd in Duitsland. Slechts 10% van de percelen bestemd voor de productie van ijswijn wordt geoogst vanwege het weer. De oogst vindt namelijk 's nachts plaats in december of januari met een temperatuur van -8 °  tot -10 °. De druiven worden zorgvuldig geplukt terwijl de bessen volledig bevroren zijn. Het persen duurt tot in de ochtend, met een kleine opbrengst, tussen 300 en 500 / L per hectare tegen 900L in Château Yquem.

Extreem zacht, intens en elegant, zijn aromatisch spectrum gaande van honing tot abrikoos, van citroen en exotische tonen tot mineraal, van vanille tot vers sandwichbrood. De extreme zoetheid wordt gecompenseerd door een uitgesproken zuurgraad. Elke kleine slok is intens en een must om te proeven
